Originally from Asia, Wakame is a large brown seaweed (Undaria pinnatifida) rich in proteins (15–22%), calcium, and vitamins, and is naturally high in glutamate, which enhances umami flavor. Introduced and cultivated in Brittany since the mid-1990s, Wakame quickly became a favorite in modern cuisine thanks to its exceptional nutritional value and versatility.
