Fish tartar with 3 seaweeds
for 4 persons. 10 min of preparation. no cooking
Soaking the day before.
Ingredients:
500 g boneless fish fillet (whiting, cod, red mullet, salmon, sea bream, flounder,...)
50 g of salt
1/2 L of water
1 lemon juice
1 sprig of thyme
60 g chopped shallot
4 gherkins
20 g dehydrated seaweed Fisherman's salad
For the dressing: 1 tablespoon of good quality olive oil, 1/2 teaspoon of lemon juice, salt, pepper, a little chopped chives
The day before, pour the water into a bowl, add the coarse salt, the lemon juice, the crumbled thyme and add the fish fillets cut into strips. Leave in a cool place overnight.
In a small sieve, moisten the seaweed flakes. Set aside.
Rinse the fish in clear water, chop it coarsely in a food processor with the shallots, gherkins and seaweed. Keep in the fridge until serving.
Serve this tartar with the prepared vinaigrette accompanied by a green salad, rice salad or potato salad.
