Agar-agar is a gelling agent discovered in Japan in 1658 by Minora Tarazaemon. For several centuries, the Japanese have used it in their daily cooking. This gelling agent of vegetable origin is more powerful than the classic gelatin of animal origin. Agar-agar, extracted from the cell walls of the red algae, contains a gelatinous substance that stimulates the intestines and reduces constipation.
